These indulgent cupcakes combine rich chocolate cake with a gooey peanut butter center, topped with chocolate chips for an extra treat! A perfect dessert for peanut butter and chocolate lovers.

For the Cupcakes:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup hot water

For the Peanut Butter Filling:

  • 1/2 cup creamy peanut butter

For the Topping:

  • 1/4 cup chocolate chips

Instructions

  • Preheat the Oven:
    Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • Prepare the Dry Ingredients:
    In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  • Cream the Butter and Sugars:
    In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
    Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  • Combine Ingredients:
    Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
    Stir in the hot water until the batter is smooth.
  • Fill the Cupcakes:
    Fill each cupcake liner about 2/3 full with batter.
    Drop a spoonful of peanut butter into the center of each cupcake.
  • Bake:
    Bake for 18-20 minutes, or until the tops of the cupcakes spring back when lightly touched.
  • Cool and Top:
    Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
    Once cooled, top each cupcake with a generous dollop of peanut butter and a sprinkle of chocolate chips.

Notes

  • For an extra gooey center, you can microwave the peanut butter for a few seconds to make it easier to spoon into the cupcake centers.
  • You can use crunchy peanut butter for added texture if desired.
