Instructions

  1. Prepare the Filling: In a skillet, cook the chorizo over medium heat until it begins to brown. Add sliced onions and continue to cook until they are caramelized, about 10 minutes. Stir in the pumpkin puree and combine well. Season with salt and pepper to taste.
  2. Roll Out the Pastry: On a floured surface, roll out the puff pastry to about 1/8 inch thick. Cut into squares or circles, depending on your preferred hand-pie shape.
  3. Assemble the Hand-Pies: Place a spoonful of the filling in the center of each pastry piece. Top with a sprinkle of cheese, then fold the pastry over and seal the edges by pressing with a fork.
