These festive Christmas Gooey Butter Cookies have a soft, melt-in-your-mouth texture enhanced with cream cheese and holiday sprinkles. They’re perfect for cookie exchanges, holiday gatherings, or simply enjoying at home.

Ingredients

Scale
  • 8 oz full-fat cream cheese, softened
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 (15.25 oz) box yellow cake mix
  • ½ cup holiday sprinkles
  • ½ cup powdered sugar

Instructions

  1. Prepare for Baking:
Preheat your oven to 350°F (175°C).
Line two baking sheets with parchment paper.
  2. Mix the Dough:
In a large mixing bowl, beat together the softened cream cheese, butter, egg, and vanilla extract using an electric mixer until smooth.
Gradually stir in the cake mix until a thick dough forms.
Gently fold in the holiday sprinkles, being careful not to overmix to prevent color bleeding.
  3. Chill the Dough:
Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes to make it easier to handle.
  4. Form the Cookies:
Scoop out 1½-inch balls of dough and roll each one in powdered sugar until fully coated.
Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  5. Bake:
Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers look slightly soft.
  6. Cool:
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Storage and Freezing:

  • Store: Keep cookies in a single layer in an airtight container at room temperature for up to 3 days.
  • Freeze: Place cookies in an airtight container or freezer bag and freeze for up to 3 months. Thaw at room temperature before serving.

Notes

  • You can use any sprinkles you like to match your holiday theme.
  • For an extra soft texture, ensure the cookies are slightly underbaked in the center.
  • The dough can be refrigerated overnight, but be sure to bring it to room temperature before rolling into balls.
