- 1/2 cup unsalted butter, melted

- 1 teaspoon vanilla extract
- 1 1/2 cups fresh apple, peeled and finely chopped
- 1/4 cup unsalted butter, melted (for coating)
- 1/2 cup granulated sugar (for coating)
- 1 teaspoon ground cinnamon (for coating)
Instructions
- Preheat oven to 350°F and grease a 12 cup muffin tin or line with paper liners.
- In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and ground cinnamon.
- In a separate bowl, mix melted butter, milk, eggs, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
- Fold in the finely chopped apples evenly throughout the batter.
- Spoon the batter into the prepared muffin tin, filling each cup about three quarters full.
- Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool for 5 minutes. Brush each muffin with melted butter, then roll in a mixture of granulated sugar and ground cinnamon until fully coated.
- Serve warm or at room temperature.
Notes
- Finely chop apples for even distribution and better texture.
- Coat muffins while still warm so the cinnamon sugar sticks well.
- Do not overbake to keep the crumb soft and moist.
- Store in an airtight container for up to 3 days.
