Description

Soft and fluffy cinnamon and apple doughnut muffins coated in sweet cinnamon sugar, packed with tender apple pieces and warm spice, perfect for breakfast or a cozy snack.


Ingredients

  • 2 cups all purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh apple, peeled and finely chopped
  • 1/4 cup unsalted butter, melted (for coating)
  • 1/2 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)


Instructions

  1. Preheat oven to 350°F and grease a 12 cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. In a separate bowl, mix melted butter, milk, eggs, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  5. Fold in the finely chopped apples evenly throughout the batter.
  6. Spoon the batter into the prepared muffin tin, filling each cup about three quarters full.
  7. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool for 5 minutes. Brush each muffin with melted butter, then roll in a mixture of granulated sugar and ground cinnamon until fully coated.
  9. Serve warm or at room temperature.

Notes

  • Finely chop apples for even distribution and better texture.
  • Coat muffins while still warm so the cinnamon sugar sticks well.
  • Do not overbake to keep the crumb soft and moist.
  • Store in an airtight container for up to 3 days.
