These soft and fluffy Cinnamon Doughnut Muffins are the perfect treat for breakfast or a snack. Coated in a sweet cinnamon sugar mix, they’re just like a doughnut, without the frying. Perfectly spiced with nutmeg, these muffins will melt in your mouth!

Ingredients

  • 3/4 cup sugar
  • 1 large egg
  • 1 1/2 cups plain flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 cup vegetable oil
  • 3/4 cup milk
  • 1 tsp vanilla essence

Coating:

  • 1 tsp ground cinnamon
  • 1/3 cup sugar

Instructions

  • Preheat the oven: Preheat the oven to 180°C (350°F). Lightly grease a 12-cup muffin pan with spray or vegetable oil.
  • Mix dry ingredients: In a smaller bowl, combine flour, baking powder, salt, and nutmeg.
  • Mix wet ingredients: In a large bowl, beat together sugar and egg until light in color. Add oil, milk, and vanilla essence, mixing until smooth.
  • Combine wet and dry ingredients: Gradually add the dry flour mixture to the wet ingredients and stir until just combined. Avoid overmixing.
  • Fill muffin tin: Spoon the mixture into the prepared muffin pan.
  • Bake: Bake for 15-18 minutes or until a skewer inserted into the center of a muffin comes out clean.
  • Cinnamon sugar coating: While the muffins are still hot, remove them from the pan and roll the tops in the combined cinnamon and sugar mixture. For extra flavor, you can brush the muffins with melted butter before rolling them in the cinnamon-sugar mix.
  • Cool: Place the muffins on a wire rack to cool.
