  • 2 teaspoons active dry yeast
  • 1 tablespoon granulated sugar
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons salt
  • 2 tablespoons unsalted butter, melted
  • 1/4 teaspoon baking soda (for boiling)

For the Cinnamon Sugar Coating:

  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  • Prepare the Dough:
    • In a large bowl, combine warm water, yeast, and sugar. Let it sit for 5-10 minutes, or until it becomes frothy.
    • Add flour, salt, and melted butter to the yeast mixture. Stir to combine and knead for 5-7 minutes until smooth and elastic.
    • Cover the dough with a damp cloth and let it rise in a warm place for 1 hour, or until it doubles in size.
  • Shape the Pretzel Bites:
    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • Punch down the dough and divide it into small pieces, rolling each into a small ball or bite-sized pieces.
    • Bring a large pot of water to a boil, adding 1/4 teaspoon of baking soda. Gently drop each dough ball into the boiling water for 30-45 seconds, then remove and place on the prepared baking sheet.
  • Bake the Pretzel Bites:
    • Bake the pretzel bites in the preheated oven for 12-15 minutes, or until golden brown.
  • Coat in Cinnamon Sugar:
    • While the pretzel bites are baking, melt 1/4 cup of butter in a small bowl.
    • In another bowl, combine granulated sugar and cinnamon.
    • Once the pretzel bites are done baking, immediately brush them with melted butter, then roll them in the cinnamon sugar mixture until coated.
  • Serve:
    • Let the pretzel bites cool slightly before serving. Serve warm with a side of caramel or chocolate sauce for dipping, if desired.

Notes

  • If you prefer a savory option, omit the cinnamon sugar coating and sprinkle with coarse salt.
  • You can make the dough ahead of time and refrigerate it for up to 24 hours before baking. Just let it come to room temperature before boiling and baking.
