Description

Light and fluffy cloud bread with a warm cinnamon sugar swirl. Naturally gluten free, low in carbs, and perfect for a sweet breakfast or snack.


Ingredients

  • 3 large eggs, separated
  • 3 tablespoons cream cheese (45g), softened
  • 1/4 teaspoon cream of tartar
  • 2 tablespoons granulated sugar (25g)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon granulated sugar (12g)
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon powdered sugar for dusting (optional)


Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Beat egg yolks with cream cheese, vanilla extract, and 2 tablespoons sugar until smooth.
  3. In a separate bowl, beat egg whites with cream of tartar until stiff peaks form.
  4. Gently fold egg whites into yolk mixture.
  5. Spoon mixture onto baking sheet forming a round loaf.
  6. Mix cinnamon with 1 tablespoon sugar and swirl into top.
  7. Bake 25 to 30 minutes until lightly golden.
  8. Cool completely before slicing and dust with powdered sugar if desired.

Notes

  • Fold gently to maintain volume.
  • Do not overbake.
  • Store refrigerated up to 3 days.
