Description
Light and fluffy cloud bread with a warm cinnamon sugar swirl. Naturally gluten free, low in carbs, and perfect for a sweet breakfast or snack.

- 3 large eggs, separated
- 3 tablespoons cream cheese (45g), softened
- 1/4 teaspoon cream of tartar
- 2 tablespoons granulated sugar (25g)
- 1 teaspoon ground cinnamon
- 1 tablespoon granulated sugar (12g)
- 1/2 teaspoon vanilla extract
- 1 teaspoon powdered sugar for dusting (optional)
Instructions
- Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Beat egg yolks with cream cheese, vanilla extract, and 2 tablespoons sugar until smooth.
- In a separate bowl, beat egg whites with cream of tartar until stiff peaks form.
- Gently fold egg whites into yolk mixture.
- Spoon mixture onto baking sheet forming a round loaf.
- Mix cinnamon with 1 tablespoon sugar and swirl into top.
- Bake 25 to 30 minutes until lightly golden.
- Cool completely before slicing and dust with powdered sugar if desired.
Notes
- Fold gently to maintain volume.
- Do not overbake.
- Store refrigerated up to 3 days.
