Description

Indulge in the velvety richness of this Classic Creamy Chocolate Mousse. A perfect Valentine’s Day treat, this mousse combines dark chocolate, smooth heavy cream, and egg yolks for a luxurious dessert topped with whipped cream and chocolate shavings.


Ingredients

  • 6 oz dark chocolate, finely chopped
  • 1 1/4 cups heavy cream, divided
  • 4 large egg yolks
  • 1/4 cup granulated sugar
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • Whipped cream, for garnish
  • Chocolate shavings, for garnish


Instructions

  • Melt the Chocolate:
    • In a heatproof bowl, combine the finely chopped dark chocolate and 1/2 cup of heavy cream.
    • Gently melt the chocolate mixture by placing the bowl over a pot of simmering water (double boiler method) or microwaving in 20-second intervals, stirring in between until smooth and fully melted. Set aside to cool slightly.
  • Prepare the Egg Mixture:
    • In a separate bowl, whisk together the egg yolks, granulated sugar, vanilla extract, and salt until smooth and slightly thickened.
    • Heat the remaining 3/4 cup of heavy cream in a small saucepan over medium heat until it starts to simmer.
    • Gradually pour the hot cream into the egg yolk mixture while whisking constantly to temper the eggs (this prevents them from scrambling).
  • Combine Chocolate and Egg Mixture:
    • Slowly add the tempered egg mixture into the melted chocolate, whisking gently until the chocolate mixture is smooth and well combined.
  • Chill the Mousse:
    • Pour the mousse mixture into individual serving cups or bowls. Refrigerate for at least 2 hours or until the mousse is set and firm.

Notes

  • Garnish with whipped cream and chocolate shavings just before serving.
  • For a more indulgent experience, you can add a dash of liqueur like Grand Marnier or Chambord for a hint of flavor.
