Description

This classic meatloaf is hearty, juicy, and finished with a sweet and tangy ketchup glaze. Made with simple pantry staples like ground beef, breadcrumbs, onions, and eggs, it’s the ultimate comfort food — perfect for weeknights or Sunday dinners with family.


Ingredients

  • 2 lb ground beef (80/20)
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 Tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning or dried parsley
  • For glaze: 1/2 cup ketchup, 2 Tbsp brown sugar, 1 Tbsp Worcestershire sauce


Instructions

  1. Preheat oven to 350°F (180°C). Lightly grease a loaf pan or line with parchment paper.
  2. In a large bowl, combine beef, onion, garlic, eggs, breadcrumbs, milk, Worcestershire sauce, salt, pepper, and herbs. Mix until just combined.
  3. Shape into a loaf and place in the prepared pan or on a lined baking sheet for crispier edges.
  4. Bake for 45–50 minutes, then spread glaze on top and bake for another 10–15 minutes until glaze is glossy and loaf reaches 160°F internally.
  5. Let rest for 10 minutes before slicing. Serve hot with mashed potatoes and veggies.

Notes

  • Use ground turkey for a lighter version but add moisture (extra egg or broth).
  • Free-form loaf on a sheet pan gives a crustier edge.
  • Leftovers are great for sandwiches!
