Cloud Eggs, also known as Egg Nests, are fluffy, oven-baked whipped egg whites with a rich yolk center, served on crispy toast for a beautiful and delicious breakfast dish.

- 4 large eggs
- 1/4 teaspoon salt
- Pinch of black pepper
- 1 tablespoon chopped chives or parsley (optional)
- 2 tablespoons grated Parmesan cheese (optional)
- 4 slices of bread, toasted
Instructions
- Preheat oven to 450°F and line a baking sheet with parchment paper.
- Separate egg whites from yolks, placing yolks in individual bowls.
- Add salt to the egg whites and beat until stiff peaks form.
- Gently fold in herbs and cheese if using.
- Spoon 4 mounds of egg white onto the baking sheet and create wells in the center of each.
- Bake for 3 minutes, then carefully add one yolk into each well.
- Bake for another 3 minutes until whites are golden and yolks are just set.
- Season with pepper, garnish with herbs, and serve on toasted bread.
Notes
- Ensure no yolk mixes into the whites to get proper stiff peaks.
- Use parchment paper to prevent sticking and maintain egg shape.
- For a cheesier flavor, increase Parmesan or try other cheeses.
- Customize with herbs, spices, or even a touch of truffle oil.
