This Club Sandwich Pasta Salad combines all the classic flavors of a club sandwich with the convenience of a pasta salad! It’s packed with turkey, bacon, lettuce, tomato, and cheese for a refreshing and satisfying dish. Perfect for potlucks or summer gatherings!

Ingredients

  • 12 oz rotini pasta (or any pasta of your choice)
  • 1/2 pound cooked turkey breast, diced
  • 1/2 pound cooked chicken breast, diced
  • 4 slices cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup iceberg lettuce, shredded
  • 1/4 cup red onion, finely diced
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt (or sour cream)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to package instructions. Drain and rinse with cold water to cool.
  • In a large mixing bowl, combine the cooled pasta, turkey, chicken, bacon, cheddar cheese, tomatoes, lettuce, and red onion.
  • In a separate bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper until smooth.
  • Pour the dressing over the pasta salad and toss until evenly coated.
  • Refrigerate for at least 1 hour before serving to allow the flavors to meld.
  • Garnish with extra bacon or chopped herbs, if desired, and serve chilled.

Notes

  • Swap out the turkey and chicken for ham or other deli meats for variation.
  • For a lighter version, reduce the mayonnaise and yogurt and add more veggies.
  • This salad can be made a day ahead for a more intense flavor.
