These easy Coconut Chocolate Bars feature a chewy coconut base dipped in rich chocolate. No baking required—just simple mixing, chilling, and dipping for a delicious treat.

Ingredients

  • 4 cups unsweetened shredded coconut
  • 1/2 cup coconut oil, melted
  • 3/4 cup maple syrup
  • 1 cup chocolate (chips or chopped bar)

Instructions

  1. Line an 8 x 8-inch pan with parchment paper and set aside.
  2. In a food processor, blend the shredded coconut, melted coconut oil, and maple syrup until evenly mixed.
  3. Transfer the mixture to the lined pan and press down firmly. Refrigerate for at least 1 hour to firm up.
  4. Once firm, use a sharp knife to slice into bars.
  5. Melt the chocolate in a microwave-safe bowl or on the stovetop.
  6. Quickly dip each coconut bar in the melted chocolate until completely coated. Place on a lined plate or tray.
