Description

A delicious homemade version of the popular KFC Mashed Potato Bowls, featuring crispy popcorn chicken, creamy mashed potatoes, savory gravy, corn, and shredded cheddar cheese. Perfect for a comforting meal!

  • Chicken: 2 cups frozen popcorn chicken (or homemade fried chicken bites)
  • Mashed Potatoes:
    • 4 large potatoes, peeled and cubed
    • 1/2 cup milk
    • 1/4 cup unsalted butter
    • Salt and pepper, to taste
  • Gravy:
    • 1 packet brown gravy mix (or 2 tablespoons homemade gravy mix)
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon onion powder
    • 1/4 teaspoon black pepper
    • 2 cups water
  • Other:
    • 1 cup frozen corn
    • 1/2 cup shredded cheddar cheese
    • Salt and pepper, to taste
    • Fresh parsley (optional, for garnish)


Instructions

  • Cook chicken: Cook the frozen popcorn chicken according to package directions, either by baking, frying, or air frying until crispy.
  • Make gravy: In a small saucepan, combine the gravy packets, garlic powder, onion powder, black pepper, and water. Bring to a boil, then reduce the heat and simmer for 1 minute. Adjust seasoning as needed.
  • Cook corn: Microwave the corn with a tablespoon of water until heated through, then toss with a pinch of salt.
  • Assemble: Spoon a generous portion of mashed potatoes into each bowl. Top with crispy popcorn chicken, shredded cheddar cheese, and corn. Drizzle with warm gravy and garnish with fresh parsley, if desired.
