Ingredients

  • Corned Beef: 2 cups cooked and diced
  • Yukon Gold Potatoes: 3 medium peeled and diced
  • Yellow Onion: 1 medium diced
  • Red Bell Pepper: 1 diced
  • Garlic: 2 cloves minced
  • Butter: 2 tablespoons
  • Olive Oil: 1 tablespoon
  • Salt: 1/2 teaspoon
  • Black Pepper: 1/2 teaspoon
  • Parsley: 2 tablespoons chopped


Instructions

  1. Preheat Your Equipment: Heat a cast iron skillet over medium heat and bring a pot of water to boil.
  2. Combine Ingredients: Parboil potatoes for 5 minutes, drain. Mix beef, onion, pepper, garlic, salt, and pepper.
  3. Prepare Your Cooking Vessel: Add butter and olive oil to skillet. Swirl to coat.
