- 6 medium Yukon Gold potatoes, peeled and diced
- 2 cups cooked corned beef, shredded or chopped
- 1 small yellow onion, diced
- 2 garlic cloves, minced
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and black pepper, to taste
- Fresh parsley or chives (optional), for garnish
Instructions
- Preheat oven to 375°F and grease a 9×13 inch baking dish.
- Parboil diced potatoes in salted water for 10 minutes, then drain.
- In a pan, melt butter and sauté diced onion and minced garlic until soft.
- In a large bowl, mix potatoes, corned beef, sautéed onion mixture, half of each cheese, cream, salt, and pepper.
- Pour mixture into the prepared baking dish and spread evenly.
- Top with remaining cheddar, mozzarella, and parmesan cheese.
- Bake uncovered for 30–35 minutes until golden and bubbling.
- Let rest for 5–10 minutes before serving. Garnish with chopped parsley or chives if desired.
