Cottage Cheese Alfredo Sauce is a lighter, creamy pasta sauce made with cottage cheese, milk, Parmesan, and simple seasonings. It’s blended for extra smoothness and thickened on the stovetop for a healthier take on classic Alfredo.

Ingredients

  • 1 cup milk of choice
  • ½ cup cottage cheese
  • 1 tablespoon cornstarch
  • ¼ teaspoon salt (more or less to taste)
  • ⅛ teaspoon freshly cracked black pepper (more or less to taste)
  • ¼ teaspoon garlic powder (plus more to taste)
  • ½ cup grated fresh Parmesan or Romano cheese
  • Dried basil, to taste
  • Dried oregano, to taste

Instructions

  1. Add milk, cottage cheese, cornstarch, salt, black pepper, garlic powder, and Parmesan to a blender. Blend until the mixture is completely smooth, scraping down sides as needed.
  2. Transfer the blended mixture to a small saucepan. Stir in dried basil and dried oregano to your taste.
  3. Place the saucepan over medium-low heat. Simmer, stirring frequently, until the sauce is heated through.
  4. Taste and adjust seasonings with more salt, pepper, basil, and/or oregano if desired.
  5. Reduce heat to low and simmer the sauce for about 5 minutes, stirring occasionally, until it thickens slightly.

Notes

  • Whole milk or low-fat milk both work well; use dairy-free milk for a vegan version with vegan Parmesan.
  • For extra smoothness, blend longer until completely lump-free.
  • Adjust garlic powder, basil, and oregano to suit your preference.
  • Great for tossing with hot pasta, veggies, or as a sauce for casseroles.
