Description

These delicious and nutritious energy balls combine the creamy goodness of cottage cheese with the sweet flavors of banana bread, packed with oats, almond butter, and optional chocolate chips for the perfect grab-and-go snack!


Ingredients

  • 1 cup old-fashioned oats
  • 1/2 cup cottage cheese (blended until smooth)
  • 1 medium ripe banana (mashed)
  • 2 tbsp honey or maple syrup
  • 1/4 cup almond butter (or peanut butter)
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup mini chocolate chips (optional)
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of salt


Instructions

  • Combine Ingredients: In a large mixing bowl, combine the oats, mashed banana, blended cottage cheese, honey, almond butter, vanilla extract, cinnamon, and salt. Stir until everything is well mixed.
  • Add Mix-Ins: If using, fold in the chopped walnuts and mini chocolate chips.
  • Shape into Balls: Scoop out tablespoon-sized portions of the mixture and roll them into balls with your hands. Place the balls on a parchment-lined baking sheet.
  • Chill to Set: Refrigerate the energy balls for at least 30 minutes to firm up.
  • Serve and Store: Enjoy immediately or store in an airtight container in the refrigerator for up to 5 days.

Notes

  • You can replace the almond butter with peanut butter if preferred.
  • For an extra boost, add chia seeds or flaxseeds to the mixture!
