Potatoes

Cowboy Butter

  • 4 tbsp butter
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp lemon zest
  • 1 tsp fresh thyme leaves (or rosemary/sage as variation)

Other Ingredients

  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp paprika
  • Pinch of cayenne pepper (optional)
  • Optional: Green onions or splash of steak sauce for serving

Instructions

  1. Prep the Ingredients: Wash and halve the potatoes. Pat the steak dry with paper towels to ensure a good sear. Mince the garlic and finely chop fresh herbs to prepare the cowboy butter.
  2. Cook the Potatoes: Heat olive oil in a large skillet over medium heat. Add potatoes seasoned with salt, pepper, and paprika. Cook for about 15 minutes, turning occasionally until potatoes are golden brown and tender inside.
  3. Sear the Steak: Push potatoes to the side of the skillet and increase heat to medium-high. Season steak with salt and pepper, then sear it 3-4 minutes per side depending on thickness to achieve medium-rare or desired doneness.
  4. Add the Cowboy Butter: Reduce heat to medium. Add butter, garlic, and herbs to the skillet. Pour this cowboy butter mixture over the steak and potatoes, spooning frequently to coat everything in the rich sauce.
  5. Finish and Rest: Remove steak from heat and let it rest for a few minutes to seal in juices. Toss potatoes gently in the butter sauce once more before serving.
