Description

A deliciously creamy and savory cheese log with a festive blend of cranberries, pecans, and cheddar. Perfect for holiday parties or as an appetizer!

Ingredients

Scale

For the Cheese Log:

  • 8 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • ½ cup pecans (chopped)
  • ½ cup dried cranberries (chopped)
  • 2 tbsp fresh chives (chopped)

Other Equipment:

  • Small mixing bowl
  • Large mixing bowl
  • Spatula
  • Cling film
  • Sharp knife
  • Chopping board
  • Cheese grater

Instructions

  • Prepare the Pecan Mixture:
In a small mixing bowl, combine the chopped pecans, dried cranberries, and fresh chives. Set aside.
  • Combine Cream Cheese and Cheddar:
In a large mixing bowl, add the softened cream cheese and shredded cheddar cheese. Mix well, then add half of the pecan mixture. Stir until evenly combined.
  • Shape the Cheese Log:
Lay out a piece of cling film on a flat surface. Spoon the cheese mixture onto the cling film and use your hands to mold it into a log shape. Once shaped, wrap it tightly in the cling film and refrigerate for at least 1 hour to allow it to set.
  • Coat the Cheese Log:
After the cheese log has chilled, unwrap it from the cling film and place it on a chopping board. Spread the remaining pecan mixture evenly over the board and roll the cheese log in it until fully coated.
  • Serve:
Transfer the cheese log to a serving platter and serve with crackers for a delightful appetizer.

Notes

  • For extra flavor, try adding a drizzle of honey or balsamic glaze when serving.
  • This can be prepared ahead of time and refrigerated until ready to serve.
