Ingredients

One (15.25 oz) can of whole kernel corn, drained.
One (14.75 oz) can of creamed corn.
One (8.5 oz) box of corn muffin mix (such as Jiffy).
One cup of sour cream.
Half a cup of unsalted butter, melted.
Eight ounces of cream cheese, softened and cubed.

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.

  • In a large bowl, mix together the whole kernel corn, creamed corn, corn muffin mix, sour cream, and melted butter until fully combined.

  • Gently fold in the softened, cubed cream cheese so it’s evenly distributed.

  • Pour the mixture into the prepared baking dish and smooth the top.

  • Bake for 45–50 minutes, or until the top is golden brown and the center is set.

 

  • Let cool slightly and serve warm.

Notes

  • For a spicy twist, add 1/4 cup diced jalapeños or green chilies.

  • Want it cheesier? Sprinkle shredded cheddar over the top before baking.

 

  • This casserole can be made a day ahead and reheated before serving.
