This creamy lasagna soup combines the rich flavors of Alfredo sauce with the heartiness of lasagna noodles, ground sausage, and savory spices, creating a comforting, one-pot meal perfect for chilly evenings.

  • 1/2 lb ground sausage
  • 1 small onion, chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 4 cups baby spinach
  • 5 cups low-sodium chicken broth
  • 5 lasagna noodles, broken into pieces
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 cup milk
  • 1 cup Parmesan cheese, grated

Instructions

  • Brown the Sausage:
    In a large saucepan, brown the ground sausage over medium heat. Add the chopped onion and sliced mushrooms, cooking for 5-6 minutes over medium-low heat until softened.
  • Add Garlic and Spinach:
    Stir in the minced garlic and baby spinach. Cook for 1 minute, stirring occasionally, until the spinach wilts.
  • Simmer with Broth:
    Add the chicken broth and bring to a simmer. Let it cook for 5 minutes.
  • Add Noodles and Spices:
    Add the broken lasagna noodles, dried oregano, and dried basil. Bring the mixture to a low boil. Cook for 10-12 minutes or until the noodles are tender.
  • Make the Alfredo Sauce:
    In a separate skillet, melt the butter over medium-low heat. Whisk in the flour and cook for 1 minute while whisking constantly until the mixture bubbles. Gradually whisk in the milk and cook for 3-5 minutes until the mixture thickens.
  • Add Parmesan:
    Turn off the heat and slowly whisk in the grated Parmesan cheese. If the cheese isn’t melting, place it over very low heat and whisk constantly until smooth and creamy.
  • Combine Alfredo Sauce with Soup:
    Slowly add the creamy Alfredo mixture to the soup, whisking constantly to combine until smooth.

Notes

  • You can adjust the seasoning by adding salt and pepper to taste.
  • For a lighter version, you can use low-fat milk and reduce the amount of cheese.
  • The soup can be refrigerated for up to 3 days and reheated on the stove.
