For the Pretzels:

  • 3/4 cup warm water
  • 2 1/4 tsp instant yeast
  • 4 tbsp salted butter, melted
  • 2 1/2 cups all-purpose flour
  • 1/4 cup baking soda
  • 1 egg, beaten
  • Pretzel salt (for sprinkling)

For the Casserole:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp salted butter
  • 1 yellow onion, chopped
  • 1/4 cup all-purpose flour
  • 3 cloves garlic (2 chopped, 1 grated)
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper (adjust to taste)
  • 2 tbsp fresh thyme leaves
  • 3 cups low-sodium vegetable or chicken broth
  • 4 cups broccoli florets, chopped
  • Kosher salt and black pepper, to taste
  • 2 cups whole milk
  • 2 1/2 cups shredded sharp cheddar cheese

Instructions

  • Prepare the Pretzel Dough:
    In a stand mixer, combine flour, instant yeast, warm water, and 3 tbsp melted butter. Mix on medium speed for 3-4 minutes, until smooth. If dough is too wet, add flour, 1 tbsp at a time. Cover and let rise for 15-20 minutes.
  • Make the Casserole:
    Preheat oven to 425°F (220°C).
    In a large oven-safe skillet, heat olive oil, butter, and onion over medium heat for 5 minutes, until fragrant. Whisk in flour, chopped garlic, paprika, and cayenne. Cook for 2 minutes, then gradually whisk in broth until smooth. Add broccoli, salt, and pepper. Simmer for 10 minutes until broccoli is tender. Stir in milk and 2 cups cheese. Cook for another 5-10 minutes, until thickened and creamy. Transfer to a casserole dish, if needed, and top with 1/2 cup cheese.
  • Prepare and Boil the Pretzels:
    Bring a large pot of water to a boil, adding baking soda.
    Divide pretzel dough into 8 balls and boil 4 at a time for 30 seconds. Remove with a slotted spoon and place on top of the casserole.
  • Bake and Finish:
    Brush pretzels with beaten egg and sprinkle with pretzel salt. Bake for 25 minutes until bubbling and golden brown.
    Mix 1 tbsp melted butter, grated garlic, and thyme. Brush over pretzels just before serving.
  • Serve:
    Serve the casserole hot, garnished with fresh thyme. Enjoy as a comforting standalone meal or with a side salad.
