Description

This Creamy Garlic & Potato Dip is a luscious blend of roasted garlic, smooth potatoes, and olive oil, perfect for dipping, spreading, or eating by the spoonful. It’s rich, comforting, and loaded with bold flavor.


Ingredients

  • 2 large russet potatoes (about 1.5 pounds)
  • 1 whole head of garlic
  • 1/3 cup olive oil
  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped chives or green onions
  • Optional: pinch of paprika or chili flakes for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Wrap a whole head of garlic in foil with a drizzle of olive oil and roast for 30 minutes, or until soft and golden.
  2. Peel and chop potatoes. Boil in salted water until tender, about 15 minutes. Drain well.
  3. Squeeze roasted garlic cloves into the warm potatoes. Add olive oil, sour cream, lemon juice, salt, and pepper.
  4. Blend or mash until smooth and creamy. Adjust seasoning to taste.
  5. Spoon into a serving bowl. Drizzle with olive oil and top with chopped chives or paprika.
  6. Serve warm, at room temperature, or chilled with dippers of choice.

  • Blend while potatoes are warm for best texture.
  • Roasted garlic adds a rich, mellow flavor—don’t skip it!
  • Use Greek yogurt for a tangier version.
  • Let dip chill to deepen the flavors before serving.
