- 2 large russet potatoes (about 1.5 pounds)
- 1 whole head of garlic
- 1/3 cup olive oil
- 1/2 cup sour cream or Greek yogurt
- 2 tablespoons lemon juice
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 2 tablespoons chopped chives or green onions
- Optional: pinch of paprika or chili flakes for garnish
Instructions
- Preheat oven to 400°F (200°C). Wrap a whole head of garlic in foil with a drizzle of olive oil and roast for 30 minutes, or until soft and golden.
- Peel and chop potatoes. Boil in salted water until tender, about 15 minutes. Drain well.
- Squeeze roasted garlic cloves into the warm potatoes. Add olive oil, sour cream, lemon juice, salt, and pepper.
- Blend or mash until smooth and creamy. Adjust seasoning to taste.
- Spoon into a serving bowl. Drizzle with olive oil and top with chopped chives or paprika.
- Serve warm, at room temperature, or chilled with dippers of choice.
