Ingredients
Scale
- 2 cups Marinara Sauce, divided
- 1 head Green Cabbage
- ½ tablespoon Avocado Oil
- 2 cups Cauliflower Rice
- ¼ cup White Onion, diced
- 1 teaspoon Garlic, minced
- 1 lb Lean Ground Beef
- ½ tablespoon Parsley
- 2 teaspoons Italian Seasoning
- ¼ teaspoon Nutmeg
- 1 Egg, whisked
- Salt, to taste
Instructions
- Preheat oven to 350°F. Pour 3/4 cup of the marinara sauce into the bottom of a casserole dish to coat evenly.
- Bring a large pot of water to a boil. Add the cabbage head and boil for 5 minutes. Drain and set aside to cool.
- In a sauté pan, heat avocado oil. Add cauliflower rice, diced onion, and minced garlic. Sauté until slightly tender.
- Add ground beef, parsley, Italian seasoning, nutmeg, whisked egg, salt, and 1/2 cup marinara sauce. Cook while breaking up the meat and mixing well.
- Peel off 12 large cabbage leaves and cut a V-shape at the base of each to remove the thick stem.
- Place 2–3 tablespoons of the filling onto each leaf. Fold in the sides and roll up from the bottom like a burrito.
- Repeat with remaining leaves and arrange rolls seam-side down in the prepared casserole dish.
- Pour remaining marinara sauce over the top. Cover tightly and bake for 1 hour.
- Remove from oven and serve hot.
Notes
- You can substitute ground turkey or chicken for beef.
- Use store-bought or homemade marinara for convenience.
- To make it dairy-free, ensure marinara has no added cheese.
- Can be prepared ahead and stored in the fridge for up to 3 days.
