These Healthy Cabbage Rolls are a low-carb, high-protein twist on a classic comfort dish. Made with cauliflower rice, lean ground beef, and flavorful marinara, they’re perfect for a wholesome family dinner or meal prep.

  • 2 cups Marinara Sauce, divided
  • 1 head Green Cabbage
  • ½ tablespoon Avocado Oil
  • 2 cups Cauliflower Rice
  • ¼ cup White Onion, diced
  • 1 teaspoon Garlic, minced
  • 1 lb Lean Ground Beef
  • ½ tablespoon Parsley
  • 2 teaspoons Italian Seasoning
  • ¼ teaspoon Nutmeg
  • 1 Egg, whisked
  • Salt, to taste

Instructions

  1. Preheat oven to 350°F. Pour 3/4 cup of the marinara sauce into the bottom of a casserole dish to coat evenly.
  2. Bring a large pot of water to a boil. Add the cabbage head and boil for 5 minutes. Drain and set aside to cool.
  3. In a sauté pan, heat avocado oil. Add cauliflower rice, diced onion, and minced garlic. Sauté until slightly tender.
  4. Add ground beef, parsley, Italian seasoning, nutmeg, whisked egg, salt, and 1/2 cup marinara sauce. Cook while breaking up the meat and mixing well.
  5. Peel off 12 large cabbage leaves and cut a V-shape at the base of each to remove the thick stem.
  6. Place 2–3 tablespoons of the filling onto each leaf. Fold in the sides and roll up from the bottom like a burrito.
  7. Repeat with remaining leaves and arrange rolls seam-side down in the prepared casserole dish.
  8. Pour remaining marinara sauce over the top. Cover tightly and bake for 1 hour.
  9. Remove from oven and serve hot.

Notes

  • You can substitute ground turkey or chicken for beef.
  • Use store-bought or homemade marinara for convenience.
  • To make it dairy-free, ensure marinara has no added cheese.
  • Can be prepared ahead and stored in the fridge for up to 3 days.
