This creamy and hearty Italian Sausage Soup features savory Italian sausage, tender baby spinach, and a rich Parmesan-infused broth. A perfect comforting meal for colder weather, served with crusty bread or garlic bread.

  • 1 pound Italian sausage, casing removed
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  • Cook the Sausage:
    • In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it up with a spoon. Remove excess fat if necessary.
  • Sauté the Onion and Garlic:
    • Add chopped onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.
  • Add Liquids and Simmer:
    • Pour in the chicken broth and diced tomatoes, and bring to a simmer.
  • Stir in Cream and Parmesan:
    • Stir in heavy cream, grated Parmesan cheese, and Italian seasoning. Let the soup simmer for 10 minutes, stirring occasionally.
  • Add Spinach and Season:
    • Add the baby spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.

Notes

  • For a thicker soup, add a tablespoon of cornstarch mixed with a tablespoon of water.
  • Serve with crusty bread or garlic bread for a comforting meal.
