Golden on the outside and gooey on the inside, these Crispy Corn Cheese Bites are bursting with sweet corn, melty cheese, and savory flavor. A perfect snack or appetizer for any occasion.

- 1½ cups corn kernels
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ cup all-purpose flour
- 1 cup breadcrumbs
- 2 eggs, beaten
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon chopped parsley
Instructions
- Heat oil in a deep skillet or preheat oven to 400°F if baking.
- In a bowl, mix corn, cheddar, mozzarella, flour, parsley, salt, and pepper until well combined.
- Set up a dredging station with plates of flour, beaten eggs, and breadcrumbs.
- Scoop small portions of the mixture and form into balls.
- Roll each ball in flour, then dip in egg, then coat with breadcrumbs. Repeat for extra crispiness.
- Fry in hot oil for 3–4 minutes until golden brown, or bake for 15–18 minutes until crispy.
- Drain on paper towels, garnish with parsley, and serve hot with dipping sauces.
Notes
- Freeze formed bites for 15 minutes before frying to hold shape better.
- Panko breadcrumbs add an extra crunchy texture.
- Reheat leftovers in oven or air fryer for best results.
