Golden on the outside and gooey on the inside, these Crispy Corn Cheese Bites are bursting with sweet corn, melty cheese, and savory flavor. A perfect snack or appetizer for any occasion.


Ingredients

  • 1½ cups corn kernels
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup all-purpose flour
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped parsley


Instructions

  1. Heat oil in a deep skillet or preheat oven to 400°F if baking.
  2. In a bowl, mix corn, cheddar, mozzarella, flour, parsley, salt, and pepper until well combined.
  3. Set up a dredging station with plates of flour, beaten eggs, and breadcrumbs.
  4. Scoop small portions of the mixture and form into balls.
  5. Roll each ball in flour, then dip in egg, then coat with breadcrumbs. Repeat for extra crispiness.
  6. Fry in hot oil for 3–4 minutes until golden brown, or bake for 15–18 minutes until crispy.
  7. Drain on paper towels, garnish with parsley, and serve hot with dipping sauces.

Notes

  • Freeze formed bites for 15 minutes before frying to hold shape better.
  • Panko breadcrumbs add an extra crunchy texture.
  • Reheat leftovers in oven or air fryer for best results.
