- 2 large yellow onions, sliced into 1 cm rings
- 150 g all-purpose flour
- 50 g cornstarch
- 1 teaspoon baking powder
- 1 teaspoon salt (plus more for sprinkling)
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 250 ml club soda or sparkling water
- Vegetable oil for frying
Instructions
- Heat vegetable oil in a deep frying pan to 175°C (350°F).
- In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, paprika, and garlic powder.
- Slowly pour in the club soda and whisk until a smooth batter forms. Let rest for 5 minutes.
- Separate onion slices into individual rings and pat dry.
- Dip each ring into the batter, allowing excess to drip off.
- Fry in small batches for 2–3 minutes per side until golden and crispy.
- Transfer to a wire rack and sprinkle with extra salt while hot.
- Serve immediately with your favorite dipping sauces.
Notes
- Use cold club soda for a crispier coating.
- Let the batter rest to activate the baking powder.
- Drain on a rack instead of paper towels for ultimate crunch.
