- 2 large eggs
- 1 medium potato, thinly sliced
- 1/4 cup shredded mozzarella cheese
- 1/2 cup fresh spinach
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Heat a non-stick skillet over medium heat and add olive oil.
- In a bowl, whisk eggs with salt and pepper until smooth.
- Place thin potato slices into the skillet and cook for 3–4 minutes until crispy on both sides.
- Pour beaten eggs over the potatoes and let cook for 1 minute.
- Sprinkle cheese and spinach on one side of the egg mixture.
- Fold the wrap in half and cook for another 1–2 minutes until cheese is melted.
- Let rest for a minute, slice, and serve warm.
Notes
- Use a mandoline for even potato slices.
- Let the eggs set before folding for easier handling.
- Customize with herbs or extra fillings like peppers or onions.
