Description

A crispy, cheesy potato-egg wrap packed with fresh spinach and melty mozzarella. Ready in just 10 minutes, it’s the perfect breakfast or snack for busy days.


Ingredients

  • 2 large eggs
  • 1 medium potato, thinly sliced
  • 1/4 cup shredded mozzarella cheese
  • 1/2 cup fresh spinach
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper


Instructions

  1. Heat a non-stick skillet over medium heat and add olive oil.
  2. In a bowl, whisk eggs with salt and pepper until smooth.
  3. Place thin potato slices into the skillet and cook for 3–4 minutes until crispy on both sides.
  4. Pour beaten eggs over the potatoes and let cook for 1 minute.
  5. Sprinkle cheese and spinach on one side of the egg mixture.
  6. Fold the wrap in half and cook for another 1–2 minutes until cheese is melted.
  7. Let rest for a minute, slice, and serve warm.
