  • 2 lbs boneless, skinless chicken breasts
  • 2 (8 oz) packages of cream cheese, cubed
  • 1 packet (1 oz) ranch seasoning mix
  • 1½ cups chicken broth
  • 1½ cups shredded cheddar cheese
  • 1 lb rotini or penne pasta
  • 1 cup cooked and crumbled bacon
  • 2 cups milk or heavy cream
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Optional: chopped green onions for garnish

Instructions

  • Cook the Chicken:
    Place the chicken breasts in the crock pot. Sprinkle ranch seasoning mix, garlic powder, and onion powder over the chicken. Add cubed cream cheese on top and pour in the chicken broth.

  • Slow Cook:
    Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.

  • Shred the Chicken:
    Once cooked, shred the chicken directly in the crock pot using two forks. Mix it well with the creamy sauce.

  • Add Pasta:
    Stir in the uncooked pasta and milk or heavy cream. Ensure the pasta is fully submerged in the liquid. Cover and cook on high for 20-30 minutes, stirring occasionally, until the pasta is tender.

  • Add Cheese and Bacon:
    Once the pasta is cooked, stir in the shredded cheddar cheese and crumbled bacon. Mix until the cheese is melted and everything is well combined.

  • Serve:
    Garnish with chopped green onions, if desired. Serve hot and enjoy!
