Description
A light and flavorful dairy-free shrimp scampi made with garlic, olive oil, lemon, and tender shrimp tossed with pasta.
Ingredients

- 12 ounces spaghetti
- 1 pound shrimp, peeled and deveined
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1/4 cup chopped parsley
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Bring a large pot of salted water to a boil.
- Cook spaghetti and reserve 1/2 cup pasta water.
- Heat olive oil in a skillet over medium heat.
- Cook garlic briefly, then add shrimp until pink.
- Add pasta, lemon juice, zest, and a splash of pasta water.
- Toss until coated and heated through.
- Stir in parsley and serve warm.
Notes
- Do not overcook shrimp
- Reserve pasta water for sauce consistency
- Add lemon at the end for best flavor
