Description

A light and flavorful dairy-free shrimp scampi made with garlic, olive oil, lemon, and tender shrimp tossed with pasta.


Ingredients

Scale
  • 12 ounces spaghetti
  • 1 pound shrimp, peeled and deveined
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup chopped parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)


Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook spaghetti and reserve 1/2 cup pasta water.
  3. Heat olive oil in a skillet over medium heat.
  4. Cook garlic briefly, then add shrimp until pink.
  5. Add pasta, lemon juice, zest, and a splash of pasta water.
  6. Toss until coated and heated through.
  7. Stir in parsley and serve warm.

Notes

  • Do not overcook shrimp
  • Reserve pasta water for sauce consistency
  • Add lemon at the end for best flavor
