Description

These Date Walnut Breakfast Cookies are a delightful blend of natural sweetness and crunch, making them an ideal choice for a nutritious breakfast or snack. Packed with heart-healthy walnuts, chewy dates, and wholesome oats, they offer long-lasting energy to fuel your day.


Ingredients

  • 1 cup rolled oats (96g)
  • 1/4 cup chopped walnuts (30g)
  • 1/2 cup chopped Medjool dates (85g)
  • 1 large egg
  • 1/4 cup almond butter (60g)
  • 1 teaspoon vanilla extract (5ml)
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon sea salt


Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the rolled oats, chopped walnuts, chopped dates, cinnamon, and sea salt. Stir to ensure everything is evenly distributed.
  • In a separate bowl, whisk together the egg, almond butter, and vanilla extract until smooth.
  • Pour the wet ingredients into the bowl with the dry ingredients. Stir until everything is well combined and a sticky dough forms.
  • Scoop about a tablespoon of dough for each cookie and place it onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon or your fingers, as they won’t spread much during baking.
  • Bake in the preheated oven for 10–12 minutes, or until the edges are golden brown.
  • Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

  • These cookies are great for meal prep!
  • Store them in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
  • You can substitute almond butter with peanut butter if preferred.
  • Add a handful of dark chocolate chips for a richer flavor!
