Description

Ingredients

  • 1 cup cracked wheat (dchicha)
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste

  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 6 cups water or vegetable broth
  • 2 tablespoons chopped fresh parsley
  • 1 cup optional pre-cooked chickpeas


Instructions

  1. Warm a large pot over medium heat and add the olive oil.
  2. Sauté the chopped onion until soft and translucent, then add garlic and cook for 1 minute.
  3. Stir in tomato paste, cumin, and paprika. Cook for 2 to 3 minutes to enhance the flavor.
  4. Pour in the water or broth and bring to a gentle boil.
  5. Add the cracked wheat and optional chickpeas, then lower heat to a simmer.
  6. Simmer uncovered for 25 to 30 minutes, stirring occasionally.
  7. Season with salt and pepper, stir in chopped parsley, and let rest 5 to 10 minutes before serving.
  8. Ladle into bowls and serve warm.
