This creamy and flavorful Deviled Egg Pasta Salad brings together tender elbow macaroni, chopped hard-boiled eggs, and a tangy dressing reminiscent of classic deviled eggs. It’s the perfect accompaniment to your next cookout or potluck.

Ingredients

Scale
  • 8 ounces elbow macaroni (about 2 cups dry)
  • 6 hard-boiled eggs, chopped
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon white vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika, plus extra for garnish
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup celery, finely diced
  • 1/2 cup red onion, finely diced
  • Fresh parsley or chives, chopped (optional, for garnish)

Instructions

  • Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add the elbow macaroni and cook according to package instructions until al dente.
    • Drain the pasta and rinse under cold water to stop the cooking process and cool the pasta.
    • Set aside to drain completely.
  • Prepare the Dressing:
    • In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, white vinegar, garlic powder, paprika, salt, and black pepper until smooth and well combined.
  • Combine Ingredients:
    • Add the cooled pasta, chopped hard-boiled eggs, diced celery, and diced red onion to the bowl with the dressing.
    • Gently fold the ingredients together until the pasta and eggs are evenly coated with the dressing.
  • Chill:
    • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
    • For best results, chill for 2-3 hours or overnight.
  • Serve:
    • Before serving, give the salad a gentle stir.
    • Transfer to a serving dish and garnish with a sprinkle of paprika and chopped fresh parsley or chives, if desired.
    • Serve chilled.

Notes

  • For added texture and flavor, consider mixing in diced dill pickles or a tablespoon of pickle relish.
  • Adjust the seasoning to taste; you may want to add more salt, pepper, or mustard depending on your preference.
  • This salad can be made a day in advance, making it convenient for gatherings.
