- 3 cups cooked white rice (preferably day-old)
- 1 medium yellow onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a large skillet over medium-high heat.
- Add ground beef and cook, breaking it up, until browned and cooked through.
- Push the beef to one side and add onion, bell peppers, celery, and garlic. Sauté until softened.
- Stir everything together and season with Cajun seasoning, salt, and black pepper.
- Add the cooked rice and mix well to combine. Add a splash of chicken broth if desired.
- Cook for 3–4 minutes until heated through and flavors meld.
- Taste and adjust seasoning, then serve hot with optional garnishes.
