- 2 tablespoons cornstarch

- ¼ teaspoon salt
- 2 large egg yolks, beaten
- ¾ cup sweetened condensed milk, diluted with ¾ cup water
- 2 tablespoons unsalted butter
- 1 tablespoon vanilla extract
- Whipped cream, for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch pie dish with vegetable oil cooking spray.
- In a bowl, combine chopped pecans, softened butter, light brown sugar, and salt. Mix until crumbly.
- Press the pecan mixture into the bottom and up the sides of the prepared pie dish.
- Bake for 10–12 minutes until golden brown. Remove from oven and let cool.
- In a saucepan, whisk together brown sugar, cornstarch, flour, and salt.
- Gradually add egg yolks, sweetened condensed milk diluted with water, and butter. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5–7 minutes).
- Remove from heat and stir in vanilla extract.
- Pour the butterscotch filling into the cooled pecan crust. Smooth the top with a spatula.
- Refrigerate for at least 1 hour, or until set.
- Before serving, top with whipped cream. Slice and enjoy!
Notes
- For a different twist, try adding toffee bits, chocolate chips, or a sprinkle of cinnamon to the crust.
- Store covered in the refrigerator for up to 4 days or freeze for up to 2 months.
