A fresh and creamy Nigerian salad made with crisp vegetables, beans, eggs, and a rich dressing.


Ingredients

  • 2 cups cabbage, finely shredded
  • 1 cup carrots, grated
  • 1 cup cucumber, chopped
  • 4 boiled eggs, sliced
  • 1 cup baked beans
  • 1 cup sweet corn
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Prepare all vegetables by chopping and grating.
  2. Add cabbage, carrots, cucumber, beans, and corn to a large bowl.
  3. Add sliced boiled eggs.
  4. Add mayonnaise and mix gently.
  5. Season with salt and black pepper.
  6. Chill slightly before serving.
