This quick and healthy dish combines tender mushrooms, nutrient-packed spinach, and fragrant garlic, brightened with a splash of lemon juice. Perfect as a side dish, main course addition, or topping!

  • 2 tbsp olive oil
  • 1 lb mushrooms (cremini, button, or a mix), sliced
  • 4 cups fresh spinach, cleaned
  • 4 cloves garlic, minced
  • 1 tbsp lemon juice, freshly squeezed
  • Salt and pepper to taste
  • Optional garnish: Fresh parsley or red pepper flakes for a spicy kick

Instructions

  • Prep the Ingredients: Wash and pat dry the mushrooms, then slice evenly. Clean and dry the spinach. Mince the garlic and juice the lemon.
  • Sauté the Mushrooms: Heat 2 tbsp olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook for 5–7 minutes, stirring occasionally, until they soften and turn a deep brown.
  • Add Garlic and Spinach: Once the mushrooms are browned, add the minced garlic. Sauté for 1–2 minutes, stirring constantly to avoid burning. Add the fresh spinach to the skillet and toss gently to combine with the mushrooms and garlic.
  • Season and Finish: Season the dish with salt and pepper to taste. Drizzle 1 tbsp of lemon juice over the mixture and toss everything to combine.
  • Serve: Garnish with fresh parsley or a sprinkle of red pepper flakes if desired. Serve hot as a side dish or use as a topping for rice, pasta, or grilled meats.
