Ingredients

  • Zucchini: 4 cups shredded (about 2 large)
  • Eggs: 3 large
  • Cheddar Cheese: 1 ½ cups shredded
  • Parmesan Cheese: ½ cup grated
  • All-Purpose Flour: ½ cup
  • Onion: 1 small, finely chopped
  • Garlic Powder: 1 teaspoon
  • Salt: 1 teaspoon
  • Black Pepper: ½ teaspoon
  • Olive Oil: 2 tablespoons


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13″ baking dish.
  2. In a large bowl, mix shredded zucchini with salt. Let sit for 10 minutes, then squeeze out as much liquid as possible.
  3. Add eggs, cheddar cheese, parmesan cheese, onion, flour, garlic powder, black pepper, and olive oil to the zucchini. Mix until fully combined.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Optional: Sprinkle extra cheese or breadcrumbs on top for added texture.
  6. Bake uncovered for 35–40 minutes until the top is golden and a knife inserted comes out clean.
