All the flavors of classic stuffed peppers in an easy-to-make casserole! This comforting dish combines ground beef, bell peppers, rice, and a cheesy tomato sauce for a one-pan dinner your whole family will love.

  • 1 pound ground beef (or ground turkey)
  • 1 small onion, diced
  • 3 bell peppers (any color), diced
  • 3 garlic cloves, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup cooked rice (white or brown)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar or mozzarella cheese
  • 1 tablespoon olive oil

Instructions

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a large oven-safe skillet or casserole dish over medium heat. Add ground beef and onion, cooking until the beef is browned and the onion is translucent. Drain any excess fat.
  • Stir in diced bell peppers and garlic. Cook for 3–4 minutes until the peppers begin to soften.
  • Add diced tomatoes, tomato sauce, cooked rice, Italian seasoning, salt, and black pepper. Stir to combine.
  • Sprinkle shredded cheese evenly over the top.
  • Transfer the skillet to the oven and bake for 15–20 minutes, or until the cheese is melted and bubbly.
  • Let cool slightly before serving.

Notes

  • For a spicier version, use jalapeño peppers or add a pinch of red chili flakes.
  • Swap the rice for quinoa or cauliflower rice for a low-carb option.
