- 1 pound ground beef (or ground turkey)
- 1 small onion, diced
- 3 bell peppers (any color), diced
- 3 garlic cloves, minced
- 1 can (15 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 cup cooked rice (white or brown)
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar or mozzarella cheese
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet or casserole dish over medium heat. Add ground beef and onion, cooking until the beef is browned and the onion is translucent. Drain any excess fat.
- Stir in diced bell peppers and garlic. Cook for 3–4 minutes until the peppers begin to soften.
- Add diced tomatoes, tomato sauce, cooked rice, Italian seasoning, salt, and black pepper. Stir to combine.
- Sprinkle shredded cheese evenly over the top.
- Transfer the skillet to the oven and bake for 15–20 minutes, or until the cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
- For a spicier version, use jalapeño peppers or add a pinch of red chili flakes.
- Swap the rice for quinoa or cauliflower rice for a low-carb option.
