French Toast Roll-Ups are crispy on the outside, creamy on the inside, and bursting with sweet fruit and cinnamon flavor — a handheld twist on classic French toast.

- 8 slices white sandwich bread, crusts removed
- 4 ounces cream cheese, softened
- 1/2 cup strawberries, diced
- 1/4 cup blueberries
- 2 large eggs
- 1/4 cup milk
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Warm a nonstick skillet over medium heat.
- In a bowl, whisk together eggs and milk. In a separate bowl, mix sugar and cinnamon.
- Flatten each bread slice with a rolling pin. Spread cream cheese, add strawberries and blueberries, and roll tightly.
- Dip rolls in egg mixture, coating all sides.
- Fry in the skillet until golden brown on all sides, about 2–3 minutes per side.
- Immediately roll in cinnamon sugar mixture.
- Serve warm with syrup or powdered sugar.
Notes
- Use soft bread for easier rolling.
- Warm cream cheese slightly for easier spreading.
