- 3 cups vanilla ice cream
- 3 cups crushed cornflakes
- 2 cups coconut flakes
- 4 tsp cinnamon (to taste)
- 1½ cups corn syrup
- Oil for frying
- Chocolate topping
- Caramel topping
- Whipped cream
- Cherries
Instructions
- Scoop medium-sized balls of ice cream and place them on a tray. Freeze for at least 1 hour.
- Mix crushed cornflakes, coconut flakes, and cinnamon in a bowl.
- Roll frozen ice cream balls in the mixture, then freeze overnight.
- Coat the balls with corn syrup, roll in the remaining mixture, and freeze for another hour.
- Heat oil in a pot or deep fryer to 400°F.
- Fry each coated ball for 30–45 seconds until golden brown.
- Remove from oil, drain, and top with caramel, chocolate, whipped cream, and a cherry. Serve immediately.
Notes
- Ensure the oil is hot enough to crisp the coating quickly.
- Double-coating helps keep the ice cream insulated.
- Serve right after frying to enjoy the contrast of hot and cold.
