4 medium russet potatoes, peeled and sliced

1 large onion, thinly sliced

3 tbsp vegetable oil or bacon grease
- Salt and pepper to taste

1/2 tsp garlic powder (optional)
- Fresh parsley for garnish (optional)
- Heat oil or bacon grease in a large skillet over medium-high heat.
- Add sliced potatoes in a single layer and cook undisturbed for 4–5 minutes until golden brown.
- Flip and stir potatoes occasionally for even browning.
- Add sliced onions and cook for another 10–15 minutes, stirring occasionally until onions are golden and potatoes are tender.
- Season with salt, pepper, and garlic powder if using.
- Garnish with chopped parsley before serving.
Notes
- For extra crispiness, soak sliced potatoes in water for 30 minutes and dry thoroughly before frying.
- Red or Yukon Gold potatoes also work well.
- Bacon bits make a tasty addition.
