Description

Enjoy the bright, tangy, and sweet flavors of these Fruity Pebbles Donuts with their irresistible crunch! Perfect for celebrations or just because, these colorful donuts are a fun and delicious treat for any occasion.

Ingredients

Scale

For the Donuts:

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup Fruity Pebbles cereal

For the Vanilla Lemon Icing:

  • 1 cup confectioners’ sugar
  • 2-3 tbsp fresh lemon juice
  • 1/2 tsp vanilla extract
  • 2 tbsp milk (adjust as needed for consistency)

Topping:

  • 1 cup Fruity Pebbles cereal (for garnish)

Instructions

  • Prepare the Donuts:
    • Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a donut pan or use a silicone mold.
    • Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
    • Mix Wet Ingredients: In another bowl, combine the milk, egg, melted butter, and vanilla extract.
    • Combine: Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the Fruity Pebbles cereal gently.
    • Fill the Pan: Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.
    • Bake: Bake for 10-12 minutes, or until the donuts spring back when lightly pressed. Allow to cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
  • Prepare the Vanilla Lemon Icing:
    • Make the Icing: In a small bowl, whisk together the confectioners’ sugar, lemon juice, vanilla extract, and milk until smooth and thick. Adjust the consistency with more milk or sugar as needed.
  • Assemble the Donuts:
    • Dip and Decorate: Dip each cooled donut upside down into the icing to fully coat the tops. Let the excess drip off, then immediately press the iced tops into a bowl of Fruity Pebbles cereal to coat generously.
    • Set: Place the donuts on a wire rack to allow the icing to set.

Notes

  • For extra flavor, you can add a touch more vanilla extract to the icing.
  • Adjust the amount of Fruity Pebbles for coating to your liking, or use them as a fun garnish on other baked goods.
