- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) butter, melted
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup full-fat cottage cheese
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a bowl, whisk together flour, cocoa powder, and salt.
- In a separate bowl, combine melted butter, granulated sugar, and brown sugar. Stir until smooth.
- Add eggs and vanilla to the wet mixture and stir to combine.
- Fold in the dry ingredients just until incorporated.
- Gently fold in cottage cheese and chocolate chips.
- Pour batter into the prepared pan, smoothing the top.
- Optionally sprinkle more chocolate chips or flaky salt on top.
- Bake for 25–30 minutes until center is just set and toothpick comes out with moist crumbs.
- Cool completely in the pan. Chill for clean slices before serving.
