- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
Instructions
- In a large bowl, beat the eggs until foamy. Add the milk and vanilla extract, whisking to combine.
- Mix in the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt until a smooth batter forms.
- Pour vegetable oil into a medium saucepan or deep fryer to about 3/4 inch deep and heat to 375°F (190°C).
- Drop batter by spoonfuls (or use a cookie scoop) into the hot oil, frying in batches.
- Fry each bite until golden brown, turning once for even cooking, about 2–3 minutes per side.
- Remove with a slotted spoon or spider strainer and drain on a plate lined with paper towels.
- Sprinkle with powdered sugar or dip in your favorite toppings before serving.

- Don’t overcrowd the pan—fry in batches for best results.
