- 4 cod fillets (about 150g / 5 oz each)
- 3 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 tbsp olive oil
- Juice of 1/2 lemon
- Salt and pepper to taste
- 1 tbsp fresh parsley, chopped (optional)
- Lemon wedges, for serving
Instructions
- Pat cod fillets dry with paper towels and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Place the cod fillets in the skillet and sear for 2–3 minutes on each side, or until golden and cooked through. Remove and set aside.
- In the same skillet, reduce heat to medium and add butter and garlic. Cook for 1–2 minutes until fragrant.
- Add lemon juice and stir to combine.
- Return cod to the skillet and spoon the garlic butter sauce over the fillets.
- Garnish with chopped parsley and serve with lemon wedges.
