- 1 pound boneless skinless chicken breast
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup freshly grated Parmesan cheese
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped parsley
Instructions
- Bring a large pot of salted water to a boil for the spaghetti and heat a large skillet over medium heat.
- Season chicken with salt and pepper. Heat olive oil in the skillet, add chicken, and cook until golden and cooked through, about 5–6 minutes per side. Remove and slice.
- In the same skillet, add butter and garlic, cooking until fragrant.
- Stir in chicken broth and heavy cream, letting it simmer for 3–4 minutes.
- Add Parmesan, stirring until melted. Cook spaghetti until al dente, then drain (reserving 1/2 cup pasta water).
- Toss spaghetti and chicken in the sauce, adding reserved pasta water as needed for a silky texture.
- Sprinkle with parsley and serve warm.
