  • 12 ounces spaghetti
  • 1 pound boneless skinless chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped parsley

Instructions

  1. Bring a large pot of salted water to a boil for the spaghetti and heat a large skillet over medium heat.
  2. Season chicken with salt and pepper. Heat olive oil in the skillet, add chicken, and cook until golden and cooked through, about 5–6 minutes per side. Remove and slice.
  3. In the same skillet, add butter and garlic, cooking until fragrant.
  4. Stir in chicken broth and heavy cream, letting it simmer for 3–4 minutes.
  5. Add Parmesan, stirring until melted. Cook spaghetti until al dente, then drain (reserving 1/2 cup pasta water).
  6. Toss spaghetti and chicken in the sauce, adding reserved pasta water as needed for a silky texture.
  7. Sprinkle with parsley and serve warm.

  • Reserve some pasta water to adjust sauce consistency.
