These German Chocolate Pecan Pie Bites are a decadent combination of rich chocolate, crunchy pecans, and a sweet, gooey filling. With a chocolatey crust and a coconut-topped filling, these bites are perfect for satisfying your sweet tooth!

  • 3 cups pecan halves
  • 1 & 3/4 cups all-purpose flour
  • 3/4 cup confectioners’ sugar
  • 3/4 cup cold butter, cubed
  • 1/4 cup unsweetened cocoa powder
  • 1 & 1/2 cups semisweet chocolate chips
  • 3 large eggs
  • 3/4 cup light brown sugar
  • 3/4 cup light corn syrup
  • 1/4 cup unsalted butter, melted
  • 1 cup sweetened flaked coconut

Instructions

  • Toast Pecans: Preheat oven to 350°F (175°C). Bake pecans for 8-10 minutes, stirring halfway through, until fragrant and lightly toasted.
  • Prepare the Crust: In a bowl, mix together flour, confectioners’ sugar, and cocoa powder. Add the cold cubed butter and blend until the mixture forms a coarse texture (you can use a pastry blender or food processor). Press the mixture into a greased 9”x13” pan. Bake for 15 minutes, then remove from the oven and set aside to cool for 30 minutes.
  • Add Chocolate: Once the crust has cooled, sprinkle the chocolate chips evenly over the top and allow them to melt for a few minutes before spreading them evenly across the crust.
  • Make the Filling: In a large bowl, beat the eggs. Add the brown sugar, corn syrup, melted butter, sweetened coconut, and toasted pecans, and stir to combine. Pour the mixture over the chocolate-covered crust.
  • Bake: Return the pan to the oven and bake for 28-34 minutes, or until the filling is set and firm to the touch.
  • Cool and Refrigerate: Let the bars cool completely in the pan. Once cool, refrigerate for 1 hour to allow the bars to set.
  • Serve: Lift the bars from the pan using the foil overhang and cut them into squares. Enjoy!

  • For a deeper chocolate flavor, use dark chocolate chips or a mix of dark and semisweet chocolate.
