Description

Turkish Pasta Gyros features juicy marinated chicken, homemade fries, fresh vegetables, and creamy tzatziki all wrapped in warm, toasted flatbread for a delicious and satisfying meal.


Ingredients

  • 1 large flatbread (or two medium-sized flatbreads)
  • 1 tomato, cut into 6 wedges
  • 1/2 red onion, sliced
  • Small bunch of parsley, roughly chopped
  • Chicken Marinade:
  • 2 chicken thighs (skinless and boneless), sliced into chunks
  • 1 teaspoon garlic, minced
  • 1/2 tablespoon mixed herbs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 lemon, juiced
  • 1 tablespoon olive oil
  • Chips:
  • 2 large potatoes, sliced into 1cm thick wedges
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Tzatziki:
  • 2 tablespoons Greek yoghurt
  • 1/2 cucumber, grated and squeezed to remove any water
  • 2 teaspoons garlic, minced
  • 1/2 lemon, juiced
  • 1 teaspoon salt
  • 1 teaspoon black pepper


Instructions

  1. Marinate chicken thighs with garlic, mixed herbs, salt, black pepper, lemon juice, and olive oil. Set aside for 20 minutes.
  2. Slice potatoes into 1cm thick wedges. Toss with olive oil, salt, and pepper.
  3. Place potato wedges in one compartment of an air fryer. Thread chicken pieces onto skewers and place in the other compartment.
  4. Air fry both chicken and potatoes at 200°C/390°F for 16 minutes, turning halfway through, until chicken is crispy and potatoes are golden.
  5. Remove chicken from skewers and slice into bite-sized pieces.
  6. Mix all tzatziki ingredients in a bowl, making sure to squeeze excess water from cucumber. Adjust seasoning to taste.
  7. Prep tomato, red onion, and parsley.
  8. Heat or toast flatbread, then layer with tzatziki, chicken, fries, tomato, onion, and parsley. Add extra tzatziki as desired.
  9. Roll up the flatbread into a gyro (use baking paper to help hold it together). Serve and enjoy!

Notes

  • For extra flavor, marinate chicken longer or overnight.
  • Use store-bought flatbread or make your own for a fresher taste.
  • Customize with additional toppings like feta or pickled veggies.
  • Works well with chicken breast or turkey if you prefer leaner meat.
