Ingredients

For the Salad:

  • 2 large boneless, skinless chicken breasts
  • 1 head romaine lettuce, chopped
  • 1/4 cup shaved Parmesan cheese
  • 1/4 cup croutons (optional)

For the Chicken Marinade:

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste

For the Caesar Dressing:

 

  • 1/3 cup mayonnaise
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  • You can also add a hard-boiled egg for extra protein or swap the croutons for a gluten-free option if preferred.
  • For a lighter dressing, you can substitute half of the mayo with Greek yogurt.
